Using this as a template
Start from the example kitchen or press "Start over" and build your own. When you want a spreadsheet, use "Export CSV" in the ingredient library and "Export recipes CSV" in the menu overview. Both open in Excel, Google Sheets and Numbers.
The CSV columns
Ingredients: name, pack_price, pack_size, pack_unit, yield_pct, cup_weight_g, each_weight_g.
Recipes: one row per ingredient line, with recipe, type, servings, menu_price, target_food_cost_pct, labor_hours, labor_rate, ingredient, qty, unit, per, and the computed line_cost, batch_cost, cost_per_serving and food_cost_pct.
To update prices from a spreadsheet, edit pack_price in the ingredients file and import it. Ingredients are matched by name, so the new prices replace the old ones and every recipe re-costs. Cells you imported and did not change are written back exactly as they were. Text we write that starts with =, +, - or @ gets a leading apostrophe so a spreadsheet can't run it as a formula.
The formulas
- Cost of a line = amount used, converted to the pack's unit, ÷ pack size × pack price ÷ usable yield.
- Batch cost = the sum of every line. Lines marked "per serving" are multiplied by the servings in the batch.
- Cost per serving = batch cost ÷ servings per batch.
- Food cost % = cost per serving ÷ menu price × 100.
- Menu price for a target = cost per serving ÷ (target food cost % ÷ 100).
Questions
Can I download this as an Excel file?
You can export CSV files, which Excel and Google Sheets open directly. Save them as .xlsx from there if you like.
Can I import my existing spreadsheet?
Yes, if you save it as CSV with a header row. The ingredients file needs a name column, and the recipes file needs recipe and ingredient columns.
Does it work offline?
Once the page has loaded, the calculator runs entirely in your browser.
Is there a limit on recipes?
No.
